    Leave root in the ground and just harvest the young tender shoots in spring. Sautéed they taste like asparagus.

      Generally that’s a good idea, but these roots were from an area where we cleared off invasive chinaberry, privet, and autumn olive. We’re going to plant longleaf and we want them to have a chance to get started. -jsq
